Vegan Massaman Curry – Easy and Delicious!

This vegan Massaman Curry combines the flavors from Persia and Thailand. A Massaman curry is traditionally cooked with beef. The curry is super creamy and full of different flavors. Our vegan version is with firm tofu and this is, in our opinion, better than all versions with meat. Our recipe is easy to cook and with all the oriental flavors like star anis and cinnamon this curry is one of our favorites so far!

Ingredients
400 g potatos, diced
2 carrots, chopped
150 g sugar snaps
1 red onion, quatered
2 garlic cloves, chopped
3 star anis
1 stick cinnamon
600 ml coconut cream
200 ml veggie broth
3 tbs massaman curry paste
1 tbs palm sugar
1 tbs soy sauce
roasted peanuts, for serving
Fresh coriander leaves
1 red onion, thinly sliced

First pour coconut cream and veggie broth in a saucepan and add curry paste, star anis and cinnamon. Heat until it starts to simmer. Now add potato dice and simmer for 15 minutes.

Now add carrots and quartered onion. Simmer for another 10 minutes. The potatoes should be tender. Taste with palm sugar and soy sauce.

Serve the curry with fresh coriander, roasted peanuts and thinly sliced red onions next to fresh cooked rice. It also tastes good with Indian flatbread.
