Vegan Massaman Curry

This vegan Curry combines the flavor from Persia and Thailand. Traditional cooked with Beef or pork we created a vegan Massaman curry. Witch is, in our opinion, better than all versions with meat. Simple, for sure, and with all the oriental flavors like star anis and cinnamon this curry is one of our favorites so far!


gluten free meat lactose free

1 block firm tofu, diced
1 tsp strong curry powder
1 tsp soy sauce
1 tbs sesame oil
1 tbs black cumin seeds
1 tbs palm sugar

Ingredients (Curry)
600 g sweet potato, diced
2 carrots, chopped
150 g sugar snaps
1 red onion, quatered
2 garlic cloves, chopped
3 star anis
1 stick cinnamon
600 ml coconut milk
3 tbs massaman curry paste
1 tbs palm sugar
roasted peanuts, for serving
Fresh coriander leaves

Mix all ingredients for the tofu. Leave in the fridge for 30 minutes.

Heat a pan over high heat and add peanut oil. Stir fry curry paste and the palm sugar for 1 minutes. Add onions and garlic and stir fry for 1 minute more. Deglaze with coconut milk and reduce heat.

Add sweet potato dice, carrots, sugar snaps, star anis and cinnamon stick and simmer for 15 minutes.

In the meanwhile fry the tofu and serve vegan Massaman with roasted peanuts.
