Mushroom Masala (Authentic Indian Recipe)

This masala with mushrooms is perfect for quick cooking. All the flavors so typical for India come to bear in this dish. Served with rice and a fresh Indian cucumber salad, you quickly have an exotic dish for Western tastes on your plates during the week.

INGREDIENTS
300 g mushrooms, cut into quarters
2 tbs coconut oil
1 medium onion, finely chopped
2 garlic cloves, minced
2 green chilis, chopped
3 tbs tomato puree
125 ml vegetable stock
1 tsp ginger, ground
½ teaspoon turmeric
1 tsp cumin, ground
1 tsp ground coriander
2 dried red chilis
1 tsp garam masala
4 curry leaves
Fresh coriander, for serving

First, heat the coconut oil in a large frying pan over medium heat and sauté the onion for three minutes until soft.
Now add garlic and fry for another two minutes. Add all the spices and the curry leaves and cook for one minute, stirring well.
Add tomato paste and mushrooms and cook for another two minutes, stirring constantly.
Pour in water, stir well, put the lid on the pan and simmer for 5-10 minutes until the mushrooms are cooked. Serve the mushroom masala with freshly chopped cilantro.
