Mushroom Curry from Nepal (Chaiu Ko Tarkari)

This mushroom curry from Nepal is, like many other Nepalese recipes, super easy to prepare. It comes with few ingredients and is therefore ideally suited for quick cooking. The spices and the subtle spiciness of the green chili perfectly round off the taste of Chaiu Ko Tarkari. The dish can be eaten both as a side dish but also as a main course. In the end, it takes less than 15 minutes to prepare.

INGREDIENTS
400 g mushrooms, bite-sized pieces
1 red onion, finely diced
1 tomato, diced
2 cloves garlic, finely chopped
1 tsp neutral oil
¼ tsp turmeric powder
¼ tsp garam masala
1 small green chili, finely chopped
To taste:
Salt and red chili powder

To begin, heat the oil in a pan. Now add the onions and garlic and fry briefly over medium heat. Then add the green chili and spices. Sauté everything for about two minutes.

Now add the tomatoes to the pan and simmer for about three minutes. Next, add the mushrooms, cover the pan and sauté for about three to five minutes.

At the end, season mushroom curry with salt and chili powder. Serve with salad, fresh vegetables and rice.
