Bandh Gobhi Matar (Indian Cabbage and Peas)

Bandh Gobhi Matar is a simple vegan India cabage dish. You can cook this delicious meal under 30 minutes. So this recipe is the perfect during the week meal. Healthy, light, gluten- and lactose free.

400 g cabbage, washed shredded
200 g frozen peas
1 large tomato, finely chopped
1 med sized onion, chopped
2 tbs peanut oil
1 tsp Garlic-Ginger Paste
1 tsp Garam Masala
½ tsp ground turmeric
1 tsp cumin seeds
1 tsp red chili powder
½ tsp coriander powder
1 pn asafetida
Salt to taste
2 tbs fesh coriander / cilantro

Wash and rinse cabbage and peas. Set aside. Heat oil in a non stick pot and add Garlic-Ginger Paste, cumin seeds and coriander powder. Stir fry for a minute and add onions. Stir fry until they become translucent.

Add tomatoes, turmeric powder, asafetida, Garam Masala and red chili powder. Stir fry until oil is releasing from the sides. Add cabbage and peas and mix well. Pour in 100 ml water and season mixture with salt. Cover pan with a lid and cook on medium heat for about 10 minutes until the cabbage is tender. Occasionally stir it. Turn heat off when done.

Transfer to a plate and serve with fresh coriander, chapatis, rice and papadum (lentil crackers). If you don´t care if it´s vegan or not you should eat Bandh Gobi Matar with fresh fried eggs.
