Thai Green Beans with Tofu (Pad Prik King Tofu)

Pad Prik King is a stir fried Street Food dish from Thailand. For Pad Prik King we use stir fry green beans in a Red Curry Sauce. The difference to other Thai Currys, like the Red Curry, is that no coconut milk is used. In Thailands Street Food Stalls you may have eaten this dish with pork but we must say that the crispy-cewy texture of the tofu cubes fits perfect into this easy to cook meal. We prefer to use smoked tofu but you also can use “normal” firm tofu instead. Fun Fact: A confusing thing is that the Thai name indicates that ginger (king or khing) is used in this dish, which in fact is not the case. But a fact is that we just need 8 ingredients to cook this super yummy Thai dish in less than 20 minutes.

Ingredients
1 tbs peanut oil
175 g smoked tofu, cubes
5 kaffir lime leaves chiffonaded, divided
3 tbs Red Curry Paste
2 tbs palm sugar
1 tbs soy sauce
100 ml water
1 pound fresh green beans, trimmed
Fresh Jasmine rice, for serving

First heat peanut oil in a wok or skillet on high heat. Add tofu cubes and stir fry until light brown and crispy.

Remove tofu from the pan and set aside. There should be some oil remaining in the pan.

Now add red curry paste and half of kaffir lime leaves. Stir fry for about one minute befor you add palm sugar, water, and soy sauce. Stir well to combine.

Add green beans and toss to coat with sauce. Cook beans, stirring, for 6-8 minutes or until tender-crisp.

Reduce heat to low and stir in tofu. Sprinkle with remaining kaffir lime leaves and serve with Jasmine rice.
