Nepali Potato Curry (Aloo Ko Achar)

The Nepali Potato Curry is a simple dish that has its roots in India. This recipe is a adaption from a Nepali housewife we´d stayed when we traveled in Nepal. Like many other Nepalese recipes this Potato Curry is super easy to cook but also very delicious and of course very filling. When you think of many Sherpas and the hard work they do every day this meal can bring back the energy they need. The main ingredients are pre-cooked potatoes and peas. They will be mixed with some spices and mustard oil and in a very short time you get this fantastic meal. And one more time we can say that the simple dishes are the best.

Ingredients
300 grams potatoes, boiled, diced
1 ½ tsp coriander seeds
1 tsp cumin seeds
75 grams green peas, boiled
1 ½ tbs ginger, grated
2 green chilis, chopped
1 tsp sesame powder
Salt to taste
1 tsp red chilli powder
½ tsp fenugreek seeds
4 tbs mustard oil
1 ½ tbs turmeric
1 lime

In the beginning grind coriander seeds, cumin seeds and ginger in a mortar until you have a fine powder. Then set aside.

Next add boiled potatoes in a large bowl and add green peas and sesame seed powder. Now add chilis, salt, red chili powder, and grinded spices.

Super easy!

Heat oil in a small frying pan until it starts to smoke lightly. When you heat the mustard oil you remove the pungent taste it has. Remove pan from heat and add fenugreek seeds and turmeric powder to the oil. Mix well.

Now pour hot oil into the bowl of potatoes and spices and mix gently. At the end squeeze a lemon and toss it again. Serve Nepali Potato Curry with fresh baked Paratha.
