Vietnamese Fried Rice (Cơm Chiên Trứng)

Cơm Chiên Trứng or Vietnamese Fried Rice is a basic meal from Vietnam. People in Vietnam use all the stuff they want to get rid if in their fridge. That means Cơm Chiên Trứng can be made with almost anything. We always use the rice we havent´t eaten the day before and mix it with fresh vegetable like bok choy, broccoli or carrots. Add chicken, pork or shrimps and stir fry everything with scrambled eggs. In combination with fried rice you can cook a delicious meal within 15 minutes. Also perfect for just one person. Note: If you use fresh vegetables like broccoli or carrots you should pre-cook them!

Ingredients
500 g jasmine rice
600 g fresh mixed vegetables
(We used green Asparagus and mushrooms)
1 block smoked tofu
4 spring onions, chopped
2 eggs
60 ml light soy sauce
2 tbs peanut oil
½ tsp ground black pepper
1 tsp sugar
1 tbs fish sauce
Fresh coriander, for serving

Cook rice in a rice cooker. When finished remove rice, transfer to a bowl and set aside, covered, for 5 minutes. Use a fork to separate the grains. Set aside to cool completely.

Heat peanut oil in a non-stick wok over high heat. Stir together rice, salt, sugar, and black pepper, breaking up any clumps and mixing well to combine.

Now scramble eggs. Add rice and toss to combine. Stir fry for 3 minutes.

Stir in vegetables and stir fry for another 5 minutes. Add soy sauce and spring onions. Toss to combine. Season with fish sauce and serve with fresh coriander leaves.
