Indian Spinach Curry (Palak Paneer)

One of the most famous and also super delicious North Indian curries is Palak Paneer. The spinach is mixed with herbs and spices and homemade paneer. Here is our simple recipe.

Ingredients (Onion Paste)
1 medium onion, sliced
75 g cashew nuts
1 green chili, chopped
125 ml water

Ingredients (Spinach)
500 g spinach
650 ml water

Ingredients (Curry)
200 g paneer, cubed
3 tbs neutral oil
1 tsp fresh ginger, finely chopped
1 tsp dried garlic chips, crushed
75 g tomatoes, finely chopped
¼ tsp salt
1 tsp garam masala
2 tbs creme fraiche

First take all the ingredients for the onion paste and simmer the mixture in a pan for 15 minutes. In the meantime, blanch the spinach. And exactly for 4 minutes. Then put spinach in ice cold water so that it does not lose its beautiful green color.

One by one, puree onion paste and spinach in a kitchen blender. Heat oil in a pan and fry ginger and garlic chips for about 30 seconds. Add tomatoes and simmer everything for 2 minutes.

Puree tomatoes with a kitchen masher and stir the onion paste to the tomatoes. After 2 more minutes, add the pureed spinach. Mix everything well and simmer the curry again for a short moment. At the end season everything with salt and Garam Masala and lift the paneer cubes into the sauce. This mixture is now simmered again for 2 minutes.

Stir the crème fraîche into the curry and serve with rice or roti.
Tip 1: Very tasty as a side dish are also the crispy fried papadams.
Tip 2: Fry the paneer cubes briefly in a little ghee!
