Broccoli-Zucchini Pillows with spicy Peanut Sauce

Broccoli is one of my very favorite vegetables and I usually use it in curries or as a cooked side dish to other dishes. But this time I experimented a little and came up with these delicious “pillows”. I used a fully processed broccoli and a small zucchini. The Asian touch came from the spices and fresh coriander.

A broccoli for all occasions

I think the result can be seen and tasted. And the best thing is not only the outstanding taste but also the variety of uses. The broccoli and zucchini pillows can be used as a main course, as a side dish or as finger food for a party. And all with just a handful of ingredients.

Ingredients (Pillows)
1 whole broccoli
200 g zucchini
½ bunch fresh coriander, chopped
4 tbs flour
2 tsp salt
½ tsp chilli powder
¼ tsp cumin
2 tsp light soy sauce
5-6 tbs sesame seeds

Ingredients (Sauce)
2 tbs peanut butter
100 ml lukewarm water
1 pinch of salt
½ tsp chili powder

First bring the water to the boil with a teaspoon of salt and blanch the chopped broccoli in it for 15 minutes.

In the meantime, finely slice the zucchinis and mix with a teaspoon of salt. Then set aside.

Now remove the broccoli from the water and place on a clean kitchen towel together with the grated zucchini. Squeeze it out well until there is no more liquid.

Place the squeezed mixture in a bowl and mix well with the flour, coriander, soy sauce and spices. Then, with slightly wet hands, shape the mixture into small pillows.

Place the sesame seeds on a plate and turn the pillows in them until all sides are covered in sesame oil. Bake in a preheated oven at 220°C for 30 minutes, turning halfway through.

The spicy peanut dip

While the pillows are baking in the oven, mix all the ingredients for the peanut sauce well and then heat gently.

Serve the warm broccoli and zucchini pillows with the warm peanut sauce.
