Chole Bhature (Spicy Indian Chickpeas Curry)

Chole Bhature is a super delicious street food dish from the Punjabi cuisine. It is a combination of fried flatbreads (Chana Bhatura) and a chickpeas (Chole) curry. The chickpeas are cooked in a tangy and creamy sauce. It is important to cook the chickpeas until they are soft and melt in your mouth. I still remember when we had this dish for the first time in the streets of New Delhi. Here is our original Punjabi recipe.

3 simple steps

To cook the chickpeas curry you will need three simple steps. Firstly you have to cook the Chole. (If you use dry chickpeas you have to soak them in cold water over night) Than you have to make the Masala Paste and finally you cook everything together before you serve it with the fried flatbread (Bhatura).

 
 

4 SERVINGS

Ingredients (Chole)
1 can chickpeas
250 ml water
1 tsp salt
2 garlic cloves, chopped
1 bay leaf
2 black cardamom pods
1 cinnamon stick
1 star anise
½ tsp cumin seeds

Ingredients (Masala Paste)
1 red onion, chopped
2 medium sized tomatoes, chopped
2 cm ginger, chopped
4 garlic cloves
1 green chili

Ingredients (Chole Masala)
1 green chili, sliced
¼ tsp turmeric
1 tsp dried mango powder (Amchur)
1 pn asafoetida
¼ tsp red chili powder
1 tbs coriander powder
1 tbs Garam Masala
Salt, to taste
For srving:
Red onion rings
Lime wedges

Mix all ingredients for the Chole in a preassure cooker or a pot. The chickpeas should be covered with water. Add more water if needed. Cook for at least 15 minutes in the pressure cooker or 30 minutes in a covered pot.

Meanwhile add all ingredients for Masala Paste in a blender. Mix until you have a smooth paste and set aside.

Now take a pan and dry roast all spices for 1 minutes. Deglaze with Masala Paste and bring to a simmer.

Now back to the Chole: Remove all spices from the chickpeas before you mix it with the paste in the pan. Mix well and simmer for 5 minutes. Season with salt.

Prepare Bhatura like in this recipe and serve with chickpeas curry, red onion rings and lime wedges.
