Thai Basil Chicken (Pad Kra-Prao Gai)

Pad Kra-Prao or Thai Basil Chicken is one of the most popular dishes in Thailand. Why? Because it is super simple to make and tastes delicious. This are the two reasons you can find this dish as street food all over Thailand. One of the most important ingredient is the holy basil. In our recipe we use chicken meat (gai) but you can also use beef or pork instead of chicken.

 
 

4 SERVINGS
lactose free meat

Ingredients
400 g chicken breast, thinly diced
2 cloves garlic, chopped
2 shallots, chopped
1 birds-eye chili, seedless and chopped
1 bunch holy basil, leaves
Neutral oil
4 eggs
2 tbs fish sauce
1 tbs soy sauce
1 tbs dark and sweet soy sauce
1 tbs oyster sauce

In a mortar press garlic, shallots and chili until you have a smooth paste. Prepare Thai style eggs. (See notes below)
Leave 1 tbs oil in the wok and add paste. Stir for 2 minutes and add chicken. Stir fry for 2 more minutes and add fish sauce, soy sauce and oyster sauce. Shut down heat and stir in basil leaves. Serve on top of fresh Jasmin rice with a fresh fried egg.

How to prepare Thai style fried eggs:

In a wok cover ground with 1,5 cm neutral oil and heat it on medium heat. Open egg and let the inside slide in oil. Fry until you the ground is firm. Tilt wok and let oil flow on the white part of the egg until it is ready to serve.
