Shan Noodle Salad (Shan Khout Shwe)

A super delicious dish from Myanmar, exactly from the Shan state. That´s a ethnic group and also a part of the old Birma. The noodle salad dish looks a bit like the well known Spagetti Bolognese. It is very easy to make this traditional dish.

 
 

4 SERVINGS
lactose free meat

Ingredients
200 g rice noodles (pho bo kho)
2 mid sized onions, finely chopped
2 garlic cloves, finely chopped
2 big tomatoes, mashed
300 g chickenbreast, finely chopped
2 tbs peanutoil
1/2 tsp tumeric
1 1/2 tsp capsicum powder, sweet
1 tbs tomato paste
1/4 tsp salt
1 tbs fishsauce
800 ml veggie broth
1 bunch coriander / cilantro
20 g roasted peanuts
1 lime, wedges
dried chiliflakes

In the beginning soak noodles in luke warm water. In a frying pan stir fry chicken breast with some peanutoil. When meat turns into golden brown add onions, garlic and tomato paste.

Mix well and add tumeric, cpasicum powder, salt, fishsauce and 150 ml veggie broth. Simmer for 10-12 minutes on medium heat.

In the meantime heat 4 soup bowl in the ofen and cook the soaked noodles for 1-2 minutes. Drain and mix them with so dash of oil.

Heat rest of veggie broth and place noodles in soup bowls. Pour half a ladle of veggie broth over the noddles before you add the sauce.

Sprinkle with fresh cilantro / coriander and roasted peanut and serve with lime wedges, chili flakes and fishsauce.
