Asian Green Beans Salad with Crispy Topping

This delicious recipe brings the freshness of beans and lime juice together with the intensive taste of garlic flakes and peanuts. It´s so easy to make. With just a few ingredients you can create this simple, fresh and Asian flavored green beans salad.

 
 

4 SERVINGS
gluten free meat lactose free

Ingredients
500 g green beans
5 tbs lime juice
3 tbs palm sugar
2 tbs soy sauce
1 tsp garlic chips
3 tbs coconut milk
2 tsp green curry paste
2 tsp rubbed skin of a (BIO) lime
40 g coconut flakes
40 g peanuts, roasted
20 g fried Thai shallots
2 fresh red Thai chilies, seedless, chopped
1 pn salt
A few lettuce leaves for decoration

Wash beans and cook in salted water for 10 minutes. Put beans in ice cold water to keep them green. Set aside.

Heat lime juice, palm sugar, soy sauce and green curry paste and mix on low heat until you have a smooth paste. Let the paste cool down.

Mix with beans and leave the mixture in the fridge for 30 minutes.

Meanwhile roast coconut flakes until golden brown. Put in a blender and mix with peanuts, garlic chips and salt. Wash lettuce leaves. Set on a plate and serve marinated salad with crispy topping and fresh chilis.
