Steamed Vegetable Dumplings from Penang (Chai Kueh)
Besides famous food in Penang , there are still a lot of amazing hawker food that I want to highlight it on. If you were looking for something healthy yet tasty snack to satisfy the appetite, you must try this special traditional delicacies – Chai Kueh. It is very popular typical Chinese snack among Teochew and Hakka.
It composes mainly of vegetables which is either Chinese chieves (ku chai) as filling, or sengkuang/jicama(turnip) as filling. For me, I like both!!! It wrapped in the soft, slightly chewy and translucent-like sheen skin texture and is steamed. Its very yummy when dipping with the chili dipping sause. And, the best is to serve together with Chinese tea.
Ingredients (Filling)
1 medium jicama, shredded
1 medium carrot, shredded
10 medium dried mushrooms, shredded
25 g dried shrimps, chopped
1 tsp salt, or to taste
1 tsp sugar
2 tsp cooking oil
2 tsp soy sauce
1/4 tsp pepper
Ingredients (Dough)
100gm tang mien flour
70 g tapioca flour
220 g hot boiling water
1/4 tsp salt
1 tbs cooking oil
Flour:
Add flour and salt in a large bowl and mix well.
Add hot boiling water to the flour, stir and combine. Then, mix well with cooking oil.
Cover mixing bowl for about 5-10 minutes to allow dough to cook.
Roll dough into a ball and flatten it to form a thin circle. Standardize the size by using a round cutter or small bowl to cut out the thin circle.
Filling:
Heat up oil in wok over medium heat.
Stir-fry dried shrimps till aroma. Add in mushrooms, carrots and jicama ,continue to cook for about 15 minutes.
Mix well with seasonings. Set aside to cool.
Now, add 1 tbs of fillings to the wrapper and seal the opening by pinching the edges together. Brush some cooking oil on the steaming plate, steam the dumpling for 10 minutes. Remove the steamed dumplings and brush oil on each dumpling to prevent drying up. Finally, optional garnish with fried shallots, spring onion or fried garlic.
