Chinese Asparagus & Chicken Stir Fry
Right now it is asparagus season and we love to eat this super delicious vegetable in many variations. Today we found a typical Chinese meal where green asparagus fits perfectly. Very simple and easy to cook with many falvors used in the Chinese cuisine. Another super delicious “during the week” meal on our blog!
1 bunch green Asparagus, 2 cm pieces
100 g rice noodles
2 red capsicum, diced
3 spring onions, chopped
2 cm fresh ginger, peeled & grated
2 garlic cloves, finely chopped
500 g chicken breast, diced
1 tbs palm sugar
4 tbs peanut oil
100 ml oyster sauce
50 ml black soy sauce
1 tbs fish sauce
1 tso sesame oil
Mix sauce in a small bowl and set aside. Boil rice noodles in water for 5 minutes. Drain and set aside.
Heat peanut oil in a wok and stir fry ginger and palm suger on medium heat until the suger begins to caramelize. Add garlic and stir fry for minute. Now add chicken and stir fry until the meat is lightly brown.
Stir in asparagus and spring onions and stir fry for another 3 minutes. Shut down heat and stir in noodles and sauce. Serve hot.
