Green Curry Paste

Ingredients
4 garlic cloves
10-15 green Thai chilis
2 shallots
2 kaffir lime leaves
1 lemongrass stalk, coarsely chopped
1 bunch fresh coriander/cilantro, stems and leaves
1 bunch fresh basil leaves
1 tbs grated galangal
1 tbs dark soy sauce
1 tbs lime juice
1 tsp salt
½ tsp pepper corns
1 tsp ground cumin
½ tsp ground coriander

Green Curry Paste

This paste is one of the basics in Thai cuisine. Most of the people use the green curry paste you can buy in Asian supermarkets. But have you ever thought about how easy it is to make your own curry paste? Here we show you how to make your own green curry paste. This paste is 100 % vegan because we replaced the shrimp paste with vegan ingredients.

Use a mortar to prestle all ingredients until you have a smooth paste.
Place in a jar. Cover with a lid and store in the fridge.
