600 g pork shoulder, cut against the grain into bite-sized pieces
4 tbs coriander (cilantro) roots, finely chopped
7 large garlic cloves, peeled and finely chopped
1 tbs white peppercorns
100 g palm sugar, grated finely
3 tbs fish sauce
2 tbs light soy sauce
2 tbs oyster sauce
100 ml coconut milk
Bamboo skewers, soaked for 2-3 hours

Prepare marinade by pounding the coriander (cilantro) roots, garlic, and peppercorns together.
Put pork, paste, and seasonings into a large bowl; mix well, cover, and let marinate in the refrigerator for 3-4 hours.
Thread the pork onto the skewers and grill over medium coals until slightly charred on the outside and cooked through on the inside.
Brush coconut milk on the pork occasionally while it’s on the grill.
Serve with sticky rice.
