3 kg carrots, washed, chopped
2 kg onions, peeled, diced
1,5 kg celeriac, diced (with greens)
800 g leek, chopped
120 g garlic, peeled
1,25 kg salt

Homemade Paste for Veggie Stock
This paste can be used as base for many dishes or just for a light veggie soup. Of course it´s a bit effort to make this paste. So better make more. You can keep this paste up to 6 month in your fridge. It´s absolutely worth it.
Mix all ingredients except the salt in a big bowl.
Put the mixture in a meatgrinder. This will take some time.
Make sure you also save the liquid.
At the end you should have a mixture of ground veggies.
Add salt and mix well. Use the blender to get a smooth paste.
Fill in jars. Close with a lid. Store it in the fridge.
