Homemade Paste for Veggie Stock
Our homemade paste for veggie stock has one mesage: Stop using chemical powder from the Supermarket to make your own veggie stock. This homemade paste can be used as base for many dishes or just for a light veggie soup. When you mix it with water you get a fresh and tasty veggie stock. Of course it´s a bit effort to make this paste but it is absolutely worth it. You can keep this paste up to 6 month in your fridge. It´s absolutely worth it.
3 kg carrots, washed, chopped
2 kg onions, peeled, diced
1,5 kg celeriac, diced (with greens)
800 g leek, chopped
120 g garlic, peeled
1,25 kg salt
Enough bottling jars
Tools you need
A good blender
Mix all ingredients except the salt in a big bowl. Transfer mixture to a meatgrinder. This will take some time. Make sure you also save the liquid. You can make a fresh soup out of it!
At the end you should have a mixture of ground veggies. Add salt and mix well. Use the blender to get a smooth paste. Fill in jars. Close with a lid. Store it in the fridge.
