Vegan Massaman Curry

This vegan Curry combines the flavor from Persia and Thailand. Traditional cooked with Beef or pork we created a vegan Version. Witch is, in our opinion, better than all versions with meat. Simple, for sure, and with all the oriental flavors like star anis and cinnamon this curry is one of our favorites so far!

Mix all ingredients for the tofu.
Leave in the fridge for 30 minutes.
Heat a pan over high heat and add peanut oil.
Add curry paste and the palm sugar and stir fry for 1 minutes.
Add onions and garlic and stir fry for 1 minute more.
Deglaze with coconut milk and reduce heat.
Add sweet potato dice, carrots, sugar snaps, star anis and cinnamon stick and simmer for 15 minutes.
In the meanwhile fry the tofu and serve with curry and roasted peanuts.
