Red Curry with Pork Filet and Sweet Potato

Ingredients
600 g pork filet, cut in 1 cm pieces
3 tbs red curry paste
2 tbs neutral oil
1 onion, cut in rings
4 tsp chopped ginger
500 g sweet potato, cut in 2 cm dice
400 ml coconut milk
200 ml veggie stock
4 kaffir lime leaves
1 stalk lemongrass
1 tbs fish sauce
Fresh basil and coriander leaves for serving

Red Curry with Pork Filet and Sweet Potato

After a few vegetarian and vegan recipes here´s one special meal with meat. But not only meat. No. This curry comes with super delicious pork filet pieces. Like all of our currys this one is super easy to prepare and you create a special meal for your friends or family in a short time.

Heat oil in a pan on mid heat and fry curry paste for 2 minutes
Add ginger and onion and fry for another 2 minutes.
Add potato dice, coconut milk and veggie stock.
Add lemongrass and kaffir limes leaves, bring to a simmer. Simmer for 8 minutes.
Now add pork filet pieces and simmer for 4 more minutes.
Round flavor with fish sauce and serve with rice, basil and coriander leaves.
