Homemade Thai Chili Dip

20 red thai chilies, remove cores
2 cm piece of fresh ginger, chopped
1 big red onion, chopped
2 tbs palm sugar
½ tsp shrimp paste
2 tbs fish sauce
2 tbs peanut oil

Homemade Thai Chili Dip

In every street food place in Asia you´ll find a homemade spicy dip to round the flavor of your meal.Sometimes they are spicy and sweet or have a strong fish sauce flavor. Or they are just spicy as hell.
Our own dip is a perfect combination of all the different tastes in Asia. It is sweet, spicy and rounded with fish sauce, pepper and salt.

Roast chilies, ginger, onions and shrimp paste in peanut oil.
Add palm sugar and stir until it´s liquid.
Cool down the mixture.
Add to a mixer with fish sauce and mix well.
Round the taste with salt and pepper.
