4 chicken drumsticks, with skin
4 chilis, chopped
4 tbs soy sauce
2 tbs peanut oil
2 tbs fish sauce
1/2 lemongrass stalk, chopped
4 kaffir lime leaves, without string, chopped
Fresh coriander leaves
The Thais love BBQ like we do. So we tried to create a new version of chicken drumsticks. This is the very tasty result. Heat your kettle grill and start your BBQ right now.
Wash and dry chicken drumsticks. Cut rombuses in the chicken skin and the meat.
Mix all other ingredients to marinade.
Hard rub the chicken with the marinade and put in the fridge for 30 minutes.
Heat your kettle grill and put the glowing coals on one half of the grill.
Use a heatproof bowl for the other side.
Put chicken drumsticks on the grid over the bowl and cover your kettle grill for 30 minutes.
Dab meat with marinade for a few times.
Put drumsticks on direct fire and grill on both sides for another 5-10 minures until the skin is crispy.
Serve chicken drumsticks with rice and use the rest of the marinade as dressing.
Top the dish with fresh coriander leaves.
