Sweet Potato Puree with Asian Flavors
2 big sweet potatoes, diced
250 ml coconut milk
2 gloves garlic, finely chopped
2 tsp soy sauce
2 pn cumin
2 pn strong curry powder
2 pn cinnamon
Salt, to taste
We love sweet potatoes and we always try to find some new recipe ideas with this delicious vegetable. This sweet potato puree is full of Asian flavors. This vegan puree is an universal side dish for many main courses like grilled meat or vegetables. We also tried to keep the recipe very simple and you can cook is without putting much effort in it.
Bring salted water to a boil in a pot and add sweet potato dice. Simmer for 15 minutes.
Drain water and pour in coconut milk and soy sauce. Add garlic and spices.
Use a blender to get a creamy puree. Taste with salt and serve immediately.
